Kura Sushi — With Plant-Based Foods

Surprisingly, the standard menu of Kura Sushi chain restaurants in Japan includes diverse plant-based sushi and desserts. We just savoured:

  • Rice and nori seaweed with natto fermented soybeans, tororo grated yam, takuan pickled radish, kanpyo gourd, broccoli, cucumber… then added soy sauce and wasabi. See my video of main dishes in my dedicated Bluesky thread.
  • Inarizushi, mysterious for newcomers unfamiliar with Japanese food. Sometimes spelled Inari sushi, it is a sweet deep-fried tofu pocket containing vinegared rice (do not add soy sauce or wasabi). Kura Sushi’s are very light 👍🏻 See my photo of inarizushi on Bluesky.
  • Mango, sweet potatoes, warabi-mochi (my favourite), dango topped with bean paste, and dango topped with soy sauce! The dangos reminded me of Monster Hunter 🙂 See my video of desserts on Bluesky.

Kura Sushi operates 543 restaurants in Japan. Its 61 restaurants in the USA and 56 in Taiwan have different menus.

In the frame of the 2025 world expo in Osaka, Kura Sushi launched an Expo 2025 campaign temporarily adding world cuisines to its menus in Japan. It will also open a record-breaking restaurant at the venue from 13 April to 13 October 2025.

Surprisingly, Kura Sushi's standard menu in Japan includes many #PlantBased sushi. I just ordered rice and nori seaweed with natto fermented soybeans, tororo grated yam, takuan pickled radish, kanpyo gourd, broccoli, cucumber… then added soy sauce and wasabi 🙂 #JapaneseFood
