I enjoyed a good vegan mushroom sandwich at Takao Veg Stand restaurant (Tokyo, Japan). Cooked before my eyes, this big-enough homemade vegan mushroom sandwich featured shimeji and king trumpet mushrooms, caramelized onions, lettuce, a dried tomato & nuts (cashew/almond/…) paste, and focaccia.
